- Bring water to a near-boil, then remove from heat.
- Add butterfly pea flowers and steep for 5 minutes. The water will turn a vivid deep blue.
- Strain out the flowers. Stir in honey or simple syrup while the tea is still warm, so it dissolves fully.
- Let cool slightly, then chill or pour over ice.
- To serve: pour the blue tea into a glass, then add a squeeze of lemon juice directly at the table. Watch it shift from blue to purple to pink as the acidity changes the color.
- Garnish with a lemon wheel or edible flower for the final look.
Tips & Variations:
- Layered look: Pour lemonade into a glass first, then slowly add the blue tea on top for a layered blue-to-pink gradient before stirring.
- Cocktail version: Swap in gin or vodka for an adult “potion” drink — the color-change effect works exactly the same.
- Make it a mocktail bar: Set out the blue tea, lemon wedges, and a few fruit syrups, and let people mix their own color at a party.
- Storage: The unflavored blue tea keeps in the fridge up to 5 days. Add lemon fresh, right before serving, since the color shift happens immediately.
